I have heard some things about Omotesenke and foam and dogu and other things, but I think I would rather defer to the Omotesenke practicioners out there who would know much more than I could guess, speculate or pass on without knowing any better. It was a joy to experience, and the differences were intriguing to say the least. I enjoyed it very much indeed.<br /><br />Re: the foam question, I remember the host saying that in his school, one should whisk the matcha/remove the whisk so that a thin crescent moon forms on the surface. I think that is really rather beautiful.
